Snacks… A moving meditation/exploration

As I’ve said numerous (a LOT of) times,baking has really become my “thing”. It’s fun, enjoyable, and calming to my mind and soul. My most recent, experiments have been with the classic kid food, graham crackers. I found this recipe ( ) a couple months ago, while it is good, we needed some variations! Now I’ve tried a TON of different swap in’s and today I think I found the ‘perfect’ mix (for me and for Aiden, that is).

“Graham” Crackers:
Mostly Vegan/gluten free

1/2 cup shredded coconut
1 cup blanched almond meal
1 cup oat flour or your favorite GF flour (I also liked the Namaste Brand Gluten free flour)
1/4 cup coconut sugar
1 tbsp cinnamon (less if you prefer)
1 tsp salt (I like to use Himalayan but for this batch I used black lava sea salt!)
1/2 cup vegan butter (I use earth balance, but you can use whatever you prefer. Coconut oil works well too, but they are sweeter and richer in flavor)
1/4 cup warm water
1/4 cup honey (I used raw honey, but if you are strict vegan use maple syrup)

You can follow the directions from the blog above, I tend to just put it all in the good processor ’til mixed 🙂 then roll it out on a cookie sheet. I used a pizza slicer before I toss it in a preheated 350 degree oven. 15 minutes and they are done! Easy peasy!

I hope you try them out and let me know if you tried to make them. They don’t last long in our house!
